In 2023 I wrote a Vella titled Incredibly Strange & Completely Random Holidays. Initially, I wanted to focus on ancient holidays but the source I used was wrong on so many levels and caused havoc with my publishing schedule. I didn’t want to be thwarted in my venture and took a different turn. I began to research those strange holidays you see pop up randomly across social media. I wanted to know – were they legitimate? Or just a marketing ploy? Some surprised me and I began to have fun with my research and recipe shares.

(Recent archaeological excavations have found evidence of rice in Korea about 3,000 years earlier than China!) As with most food recipes that I have researched, there are always disputes as to where the dish originates. This dish is no exception with history placing its origins to grain porridges from India and the Middle East.

Rice Cultivation: Rice cultivation in China dates back over 5,000 years, with evidence of early rice farming found in the lower Yangtze River valley. This region, rich in fertile soil and abundant water sources, provided the ideal conditions for rice to become a staple crop. Ancient Chinese farmers developed sophisticated irrigation systems and farming techniques that allowed rice to thrive, leading to its central role in Chinese agriculture and cuisine. Over centuries, rice cultivation spread throughout China, adapting to diverse landscapes and climates, ultimately becoming a cornerstone of Chinese civilization and sustaining its population through generations.

Medieval Europe: In medieval Europe, rice pudding became a popular dish among the wealthy. The recipe evolved to include ingredients such as honey, spices, and dried fruits, which were considered luxurious at the time. The addition of these ingredients transformed rice pudding into a rich and decadent dessert often served at banquets and feasts.

Colonial America: Rice pudding made its way to America with European settlers. It quickly became a favorite dessert due to its simplicity and the availability of ingredients. In colonial times, rice pudding was often flavored with nutmeg and cinnamon, spices that were commonly used in American kitchens.

A Classic Rice Pudding Recipe


To celebrate National Rice Pudding Day, why not try making this classic recipe at home? It's a comforting dessert that's perfect for any occasion.


Ingredients:
  • 1 cup of rice (short-grain or arborio)

  • 4 cups of whole milk

  • 1/2 cup of granulated sugar

  • 1/4 teaspoon of salt

  • 1 teaspoon of vanilla extract

  • 1/2 teaspoon of ground cinnamon

  • 1/4 teaspoon of ground nutmeg

  • 1/2 cup of raisins (optional)

  • 2 tablespoons of butter


Instructions:
  1. Rinse the rice: Start by rinsing the rice under cold water to remove any excess starch. This helps prevent the pudding from becoming too sticky.

  2. Cook the rice: In a medium saucepan, combine the rice, 2 cups of milk, and salt. Bring to a gentle boil over medium heat, stirring occasionally. Reduce the heat to low, cover, and let it simmer for about 20 minutes or until the rice is tender and has absorbed most of the milk.

  3. Add the remaining ingredients: Once the rice is cooked, add the remaining 2 cups of milk, sugar, and butter. Stir to combine and cook over low heat for an additional 15-20 minutes, stirring frequently to prevent the rice from sticking to the bottom of the pan.

  4. Flavor and finish: Remove the saucepan from the heat and stir in the vanilla extract, ground cinnamon, and ground nutmeg. If you like raisins in your rice pudding, now is the time to add them. Stir until all the ingredients are well incorporated.

  5. Serve: Allow the rice pudding to cool slightly before serving. It can be enjoyed warm or chilled, depending on your preference. For an extra touch of indulgence, sprinkle a little extra cinnamon on top before serving.
